Packed with flavor, these juicy stuffed mushrooms are perfect for any gathering.
Dice up pine nuts into smaller pieces and toast on low heat in a non-stick pan until lightly browned and fragrant (5 minutes). Set aside.
Remove tofu from package and in microwave safe bowl heat for 1 minute. Strain excess water from the bowl and set aside.
Chop mint and parsley and place in mixing bowl.
Crumble tofu into mixing bowl and combine all other ingredients including toasted pine nuts.
Wash button mushrooms and remove stems.
Lightly stuff mushrooms with mixture. Place on baking sheet and bake at 350° for 20 minutes.
