Tofu Veggie Curry

Curry made with garlic and ginger and packed with tofu and bright, colorful vegetables.

Cooking Directions

  • In a large pot, sauté the shallot, garlic, and ginger with oil/water until fragrant, about 4-5 minutes.
  • Add in carrots, bell pepper, curry + tomato paste, and spices. Mix until evenly incorporated.
  • Pour in the coconut milk, tofu and cauliflower. Cover and let simmer on medium-low heat until the veggies are tender, about 8-9 minutes.
  • Serve warm with rice and enjoy!

  • ½ inch ginger root, minced
  • 3 large carrots, chopped
  • 1 bell pepper, chopped
  • 2 Tbsp. red curry paste
  • 3 Tbsp. tomato paste
  • 1 Tbsp. curry powder
  • ½ tsp. cayenne
  • ½ tsp. cumin
  • ½ tsp. sea salt
  • 1 14-oz. can coconut milk
  • 1 pkg. House Foods Tofu Firm, drained and cut into cubes
  • 3 cups cauliflower florets
