Curry made with garlic and ginger and packed with tofu and bright, colorful vegetables.
In a large pot, sauté the shallot, garlic, and ginger with oil/water until fragrant, about 4-5 minutes.
Add in carrots, bell pepper, curry + tomato paste, and spices. Mix until evenly incorporated.
Pour in the coconut milk, tofu and cauliflower. Cover and let simmer on medium-low heat until the veggies are tender, about 8-9 minutes.
