Vegan Curry Fried Rice made with veggies, mushroom and packed with plant-based superfood--tofu!
Preheat your oven to 400°F/200°C. Using two forks, shred the caps and stems of the king oyster mushrooms into pieces. Toss in a bowl with the spices and olive oil, then place on a lined baking sheet and bake for 15-20 minutes, until golden brown. Set aside.
In a large skillet, heat some oil on medium-high heat and fry the onion, garlic, and ginger for 5 minutes. Add in veggies, curry powder, soy sauce, and tofu. Once the veggies are tender, stir in the cooked oyster mushrooms, rice, spring onions, and sesame oil. Cook for 4-5 more minutes before seasoning with salt and pepper to taste. Serve warm.
