Cut tofu in half horizontally, and then slice each piece in half.
In a small bowl combine maple syrup, onion powder, salt and chipotle powder.
Place tofu in a sealable bag with maple chipotle rub. Let marinade for at least 15 minutes; while tofu is marinating, preheat waffle or grill iron to medium high heat.
Once tofu is done marinating, spray cooking oil onto waffle/grill iron. Add tofu and close iron, cook until browned. Serve hot alone, with a salad or in a sandwich.
