Fry the onion and garlic in a large pot. After 5 mins, add in carrots, celery, seasoning, and tomato pasta.
Sauté until well-incorporated, then pour in tomatoes and crumble in the tofu. Cover the pot and let simmer for 10-15 mins, until the sauce is thickened. Serve with cooked pasta & enjoy!
