Savory, golden crisp waffles with potatoes, leak, cheese, and tofu for a boost of protein make for the perfect brunch.
If you have shredded fresh potatoes, wrap them in paper towels and squeeze as much water from them as possible (do not rinse).
In a large bowl, combine all ingredients.
Spray cooking oil onto waffle iron, place about half cup of the mixture and close. Cook waffles until potatoes are golden brown (depending on waffle iron settings). Once done, remove waffle and serve hot.
