Tofu Waffle Hash

Savory, golden crisp waffles with potatoes, leak, cheese, and tofu for a boost of protein make for the perfect brunch.

Cooking Directions

  • If you have shredded fresh potatoes, wrap them in paper towels and squeeze as much water from them as possible (do not rinse).
  • In a large bowl, combine all ingredients.
  • Spray cooking oil onto waffle iron, place about half cup of the mixture and close. Cook waffles until potatoes are golden brown (depending on waffle iron settings). Once done, remove waffle and serve hot.

Ingredients

  • 1 pkg. House Foods Tofu Extra Firm or Super Firm, pressed and crumbled
  • 1½ cups potatoes, shredded (fresh or frozen, do not rinse)
  • 1 small leek, finely chopped
  • 1/3 cup chedder cheese, grated
  • 2 Tbsp. nutritional yeast
  • ½ tsp. salt
  • 1/8 tsp. pepper
