Tofu Tikka Masala

Cooking Directions

  • Combine the coconut milk, spices, and salt in a shallow dish. Add in tofu cubes and coat evenly, then set aside for 15 minutes.
  • In a large pot, sauté the onion, garlic, and ginger with oil/water. After 5 minutes, add in the spices, salt, and tomatoes. Incorporate well, and then mix in veggies and marinated tofu. Cover and simmer on low heat; once veggies are almost tender — about 8 min — stir in coconut milk and maple syrup, and cook for another 5 minutes. Serve warm.

Marinated tofu:

  • 1 pkg. House Foods Tofu Extra Firm, pressed and cubed
  • ½ cup yogurt or full-fat coconut milk
  • 1 tsp. each: ground coriander, cumin, garam masala, turmeric, paprika
  • ½ tsp. sea salt

To cook:

  • 1 large onion, diced (250g)
  • 5 cloves garlic, minced
  • 2 Tbsp. ginger, minced
  • ½ tsp. cinnamon
  • ½ tsp. coriander
  • 1 tsp. garam masala
  • 2 tsp. curry powder
  • 1 tsp. red chili flakes
  • ½ tsp. sea salt
  • 2 large ripe tomatoes, pureed (400g)
  • 1 cup full-fat coconut milk
  • 3-4 cups chopped zucchini or veggies of choice
  • 1 tsp. maple syrup
