In a large pot, sauté the onion, garlic, and ginger with oil/water. After 5 minutes, add in the spices, salt, and tomatoes. Incorporate well, and then mix in veggies and marinated tofu. Cover and simmer on low heat; once veggies are almost tender — about 8 min — stir in coconut milk and maple syrup, and cook for another 5 minutes. Serve warm.
