Tofu Chocolate Cake

Rich and moist chocolate cake made with tofu that is low in fat.

Cooking Directions

  • Oil two 8 round cake pans or a 9 x 12 sheet cake pan and preheat the oven to 350°F.
  • Melt chocolate chips according to package instructions and set aside.
  • Combine flour, baking soda, baking powder, and salt in a large bowl and set aside.
  • Place melted chocolate, tofu, cocoa powder, agave nectar, water and vanilla in a food processor and process until smooth.
  • Pour chocolate mixture into flour and mix into a stiff batter.
  • Spread evenly in pans (an oiled spatula can help in this endeavor) and bake for 20-25 minutes or until a toothpick inserted into center comes out clean.
  • Remove from pans and cool on racks.

  • 1 tsp. salt
  • 1 cup sweetened chocolate chips, melted
  • ½ cup cocoa powder
  • ¾ cup sugar
  • ¼ cup water
  • 1 Tbsp. vanilla
