This super-savory vegetarian tofu and mushroom stir-fry is a flavor-packed meal served with your choice of rice or noodles.
In a frying pan, heat some oil and add garlic, mushrooms, and black bean paste to the pan. Once the mushroom mixture is fragrant, add in tofu and all sauce ingredients, then ‘shake’ the pan back and forth to distribute the sauce. Cover the pan for 5 minutes, then remove the lid and stir in cornstarch slurry. Let simmer until sauce is thickened, and season again if desired before serving. Serve with noodles or rice.
