Spinach & Tofu Ricotta Stuffed Shells

Spinach and tofu ricotto stuffed pasta shells for a nutrient-densed meal that is high in protein and completely vegan.

Cooking Directions

  • To make tofu Ricotta, mix all ingredients together.
  • Layer the bottom of a skillet with tomato sauce. Stuff tofu ricotta into precooked pasta shells and then place in a pan or skillet. Top with more tomato sauce. Bake on 350 for 20 minutes. Serve hot.

  • ½ box large pasta shells, cooked
  • 1 cup tomato sauce

Tofu Ricotta:

  • 1 pkg. House Foods Tofu Extra Firm, mashed with a fork
  • Juice from ½ lemon
  • 1 tsp. garlic powder
  • ½ tsp. salt
  • 1-2 Tbsp. nutritional yeast
  • ½ cup frozen spinach, drained well
