Teriyaki Tofu Sandwich with Herbed Dip

Teriyaki marinated tofu, crisp lettuce, red onion and red pepper with a creamy herbed aioli dip makes for the perfect lunch.

Cooking Directions

For Herbed Tofu Dip:

  • Add all ingredients to the bowl of a food processor and blend until smooth.

For the Teriyaki Tofu:

  • Add tamari, maple syrup, and mirin in a small bowl and stir to combine. Set aside.
  • Remove tofu from container. Drain and press dry.
  • Slice tofu into 6 even slices. Heat a pan with 1 Tbsp of sesame oil over medium-high heat. Add tofu slices to the pan once hot. Cook on each side for 4-5 minutes, or until golden brown. Add tofu to a separate plate.
  • Reduce heat to medium-low and pour teriyaki sauce into the pan. Add the tofu back in to the pan and cover them in the sauce.

To assemble:

  • Build the sandwich with herbed tofu dip, teriyaki tofu, red onions, red pepper, and lettuce.

Ingredients

For the Herbed Tofu Dip:

  • 4.5 oz. House Foods Tofu Soft, drained
  • ⅔ cup low-fat plain Greek yogurt
  • 1 cup packed cilantro leaves
  • ½ cup packed basil leaves
  • 2 scallions
  • 1-2 cloves garlic, peeled
  • 1½ Tbsp. lemon juice
  • ½ tsp. paprika
  • Salt to taste

For the Teriyaki Tofu:

  • 1 pkg. House Foods Tofu Extra Firm, drained and pressed dry well
  • 1 Tbsp. sesame oil
  • 2 Tbsp. low-sodium tamari or low sodium soy sauce
  • 2 Tbsp. maple syrup
  • 2 tsp. mirin (optional)

For the Sandwich:

  • 4-6 slices bread
  • Thinly sliced red onions
  • Sliced red pepper
  • Butter lettuce or greens of choice
