Lemon Bars

Vanilla, freshly squeezed lemon juice with its zest blissfully compose this vegan treat.

Cooking Directions

  • Preheat oven to 350 degrees.
  • Grease an 8x8 baking pan with canola oil or cooking spray and dust with flour.
  • To make crust, mix all ingredients by hand or with an electric mixer until it forms a dough.
  • Press dough into bottom of greased pan and bake for 10 minutes or until half baked. Set Aside.

To make filling:

  • Drain tofu and blend in a food processor until smooth.
  • Combine sugar, lemon zest, juice, flour, vanilla and cornstarch with puréed tofu in blender.
  • Pour the filling over the baked crust and bake for 40-45 minutes until it has thoroughly set .
  • Remove from the oven and place on a wire rack to cool.
  • Cut into squares and dust with powdered sugar.

Ingredients

Crust:

  • ⅓ cup corn oil
  • ¼ cup granulated sugar
  • 1 Tbsp. confectioners sugar
  • 1 cup flour
  • ¼ tsp. vanilla extract
  • ¼ tsp. salt

Filling:

  • ½ pkg. House Foods Firm Tofu
  • 1 cup sugar
  • 1 Tbsp. lemon zest (about 2 lemons)
  • ⅓ cup fresh lemon juice
  • ½ tsp. vanilla extract
  • 2 Tbsp. flour
  • 2 Tbsp. corn starch
  • confectioners sugar sifted to garnish
