Vanilla, freshly squeezed lemon juice with its zest blissfully compose this vegan treat.
Preheat oven to 350 degrees.
Grease an 8x8 baking pan with canola oil or cooking spray and dust with flour.
To make crust, mix all ingredients by hand or with an electric mixer until it forms a dough.
Press dough into bottom of greased pan and bake for 10 minutes or until half baked. Set Aside.
To make filling:
Drain tofu and blend in a food processor until smooth.
Combine sugar, lemon zest, juice, flour, vanilla and cornstarch with puréed tofu in blender.
Pour the filling over the baked crust and bake for 40-45 minutes until it has thoroughly set .
Remove from the oven and place on a wire rack to cool.
Cut into squares and dust with powdered sugar.
