Roasted Garlic Tofu Hummus
Roasted caramelized garlic blended with tofu for a thick and creamy dip

Cooking Directions
Preheat oven to 400°F
Rub garlic with olive oil and top with a pinch of salt.
Create an aluminum pouch, place garlic inside, cover and roast for 30 minutes or until browned.
Once garlic has browned and cloves have softened, remove garlic from oven and let cool.
Squeeze garlic cloves from skin; discard skin and set garlic aside.
In a food processor combine tofu, garlic, olive oil, lemon juice, and salt; pulse until smooth.
Cover and chill hummus in a refrigerator before serving.
