Cold sesame noodle with tofu and veggies made with all your pantry staples. A summer must-have.
To make tofu sauce: Whisk ingredients together until well combined. Set aside.
To make noodle sauce: Whisk ingredients together until well combined. Set aside.
In a heated non-stick pan with a little oil, pan fry tofu strips until lightly golden brown on each side. Then, push tofu aside, and add a little more oil, sauté garlic & ginger until fragrant, add in tofu sauce and coat well, let tofu absorb all the sauce. Turn off heat, taste test and sprinkle with sesame seeds. Set aside.
Place cooked and drained noodles in a big bowl, toss with sauce and veggies - serve as is or with more crispy chili flakes.
